Back in Rexburg


This weekend Hubby and I made a trip back to Rexburg for one of Steve's concerts. We enjoyed seeing our old friends, wonderful food courtesy of the taco truck, and some great music! 





Steve is in a band named "The Climbing" and they are amazing! Steve and Jason met on tour before their missions and later decided to start a band.  Jason, Jack and Steve make an amazing group and put on a great show! This weekend Steve's band played in Rexburg with a few other bands. They did great and we enjoyed the rest of the night watching other bands, playing ping pong, chowing down on Taco Bell and catching up with all our friends in Rexburg. 


Last semester I modeled for one of the art teachers for a painting he was doing. The painting is supposed to be a scene from the vision of the tree of life. I heard that BYU-Idaho had bought the painting so Steve and I went on a scavenger hunt to find the painting. Right before we left on Sunday we finally found the painting! The evil girl in the middle... yep that's me. 





When Life gives you Lemons... Make Lemon Bars!

While over at my grandpa's house yesterday my grandpa gave me a bunch of lemons from his lemon tree. Steve and I thought lemon bars would be an excellent way to get rid of all of our lemons and we were right! I found this simple easy lemon bar recipe on allrecipes.com. The lemon bars were a success and have so far been consumed for breakfast, lunch and (soon to be) dinner.

Date Night

This weekend my cute husband was very studious and was determined to get as much work done so he could cram for all of his tests. He woke up early to get started so I decided he was in need of a healthy breakfast. I made some great whole wheat pancakes and peach topping syrup for breakfast to get him going for the long day ahead.

Sauce: 
1 peach washed and diced
1 tablespoon butter
1/2 cup of white sugar
2 tablespoons of brown sugar
1 tsp of cinnamon

In a small sauce pan melt butter. Once butter is melted add the diced peaches. Let the peach and butter mixture simmer for 2 minutes. Add white sugar, brown sugar, and cinnamon and let simmer for 5-10 minutes until peaches are soft. Drizzle sauce over pancakes and eat up!

After breakfast husband went into the office to start his long day of work. I decided I needed something to keep me busy so I headed up to the DI which I always love. While at the DI on my scavenger hunt of cheap supplies for our 72 hour kit I've been putting together I came across these beauties...


Say Hello to my new coffee table coasters. I love the amazing treasures you can find at DI. Much more exciting than the 2 forks 2 spoons and mini pot I bought for our 72 hour kit. After DI I decided to go on a scavenger hunt for cheap cadbury eggs. I really don't think such a thing exists but being a cheap chocoholic i decided to continue my search. After driving all the way to Walmart (convinced that they would have by far the cheapest price) I was disappointed to find out that they had not arrived in their store. Even though I was a bit sad about my cadbury egg search it was a fun adventure.


 A couple months ago we bought this dresser for our bedroom which was in desperate need of some love and attention. So After my DI trip and my Cadbury egg hunt I came home to tackle the project. I spent the rest of the day sanding and painting and the dresser is finally starting to come together.



After all the painting was finished and husband's work was all done we decided to go out and have some fun. One of our favorite things to do is find cute little mom and pop restaurants. So we drove to Springville to find a good place to eat. As we were driving we saw the train restaurant! It is this cute little restaurant in downtown Springville that is in an old train car. We quickly pulled over and ran in. We split a burger and fries and had a great night out on the town.

When we came home we curled up on the couch and watched our new redbox movie "The Secretariat" and ate our strawberries and brownie bite cookie dough (provided by Grandpa B, Thanks!). A great ending to a prefect day.

It's Almost here!

That's right! Spring is almost here! I walked out of the dental office yesterday and felt the hint of sunshine gleaming down on my face. In my happiness I ran home to make a delicious dinner for my hubby. I Love to cook, but I feel like every once and a while cooking can get a bit old. Our favorite restaurant is Gloria's Little Italy. http://www.gloriaslittleitaly.com/ Which is this cute little Italian restaurant in Provo with amazing food. Being frugal newlyweds I decided to celebrate the warm day and make our own little Italy. Before Steve got home from school I Made a "Mackenzie's Little Italy" sign and made homemade chicken Parmesan, pasta and french bread. We sat down to our Candlelit dinner and our Italian opera and enjoyed our frugal elegant night together.

Valentines Day Festivities!

Valentines Day is my (Mackenzie's) favorite holiday so we decided to spread the festivities over the week. On Saturday I woke up at 6:00 because I was so excited to start planning my valentines day activities. In my excitement I made pink heart shaped chocolate chip pancakes. I failed to realize that my husband was still sound asleep and was no where neat waking up... so I went back to bed. By the time we woke up... three hours later the pancakes were cold but we had a good laugh and ate them anyways.   

The Festivities continued with decorating sugar cookies, making heart shaped cherry pie and making Valentines (which we have STILL not sent out). 











On Valentines Morning I woke up at 6:00 to get ready for work and found my cute husband Steve in the kitchen at the stove making me breakfast. Seriously can the man get any better?! (Thanks Mama Biringer for the great idea!)


That night I came home to decorate and found a Valentines Day card from Steve with a box of chocolate.. what a great surprise! We celebrated the night my ordering Brick Oven Pasta and bread sticks and having a candle lit dinner at home. Afterwards we built a fort and ate brownies and ice cream and watched a movie. Best Valentines Day EVER!!!! I am so lucky to be married to such a wonderful sweet man.

The Apartment

We are loving our new apartment and having so much fun making it our own. Thanks to Steve and his awesome Craigslist skills our apartment is finally coming together!
